Fruit Salad

This is a great fruit salad recipe recipe that combines fresh and dried fruit.

Fruit Salad

8 pitted prunes

1/4 cup dried apricots

1 cup apple juice or 1 cup of apple cider

1 cinnamon stick

1 banana, peeled & sliced

1 cup blueberrys

1 cup dried cranberrys

1/2 tsp whole cloves

1 large orange, sectioned & cut into bite sized pieces

1 apple, cored & cut into bite sized pieces

1/2 cup orange juice

3 Tsp orange marmalade or orange jelly

1/4 cup chopped pecan or walnuts

 

Directions

1) Combine prunes, apricots, dried cranberries, apple juice, cinnamon stick, and cloves in a saucepan. Bring to a boil, remove from heat and chill overnight.

2) Remove the dried fruit and divide the apricots, prunes, blueberries, banana, orange and apple, into four dishes. Strain the apple juice, and add orange marmalade and orange juice. Mix together and pour over fruit. Top with chopped nuts.

Tip: A dollop of fresh whipped cream on top, makes this fruit salad even more decadent.
